Ingredients
- Finely chopped bell pepper (green, yellow, red) – ¼ cup
- Finely chopped zucchini (green) – ¼ cup
- Corn kernels (boiled) – 1/4 cup
- Boiled broccoli florets (small) – ¼ cup
- Whole wheat roti (tortillas) – 2
- Cooking oil – 1 tbsp
- Pickled jalapenos (chopped) – 4-5
- Salt to taste
- Finely crushed black pepper to taste
- Red chilli powder – 1 tablespoon
- Chipotle southwest dressing – 4 tablespoon
Step By Step Process
- Take a non-stick pan/bowl and 2 tablespoon oil in it.
- As the oil begins to heat, it is time to start adding the veggies.
- First, add the finely chopped mixed capsicum, followed by green zucchini, boiled corn, broccoli florets, and jalapenos.
- Mix them together in the pan with a spatula.
- Add salt to taste along with black pepper and red chilli powder.
- Mix all of them together and wait till the vegetables sauté.
- Take the wheat tortilla and spread 2-3 tbsp of chipotle southwest dressing evenly on it.
- Place a portion of the cooked vegetables in the center of the wheat tortilla.
- Now, it is time to roll the wheat tortilla. While rolling, be careful that the veggies do not come out.
- Roll the wheat tortilla tightly.
- Once the wheat tortilla is rolled, take butter paper.
- Roll the tortilla inside the butter paper by closing its edges.
- Once rolled, cut it carefully from the center. Enjoy!
- Serve with chilli garlic hot sauce, ketchup, or salsa.
Note
- In addition to the given veggies, you can use sliced cabbage, lettuce, spring onions, carrots, spinach, beet, etc.
- Bean sprouts can also be included in the wrap with chipotle southwest dressing. This will make the vegetable wrap even healthier and add the perfect crunch to it.
- Choose a few ingredients that go together. Don’t overload the wrap with too many veggies.
