The vegetable Mexican bean burrito is quite filling and has lots of veggies packed into it. It is a yummy, complete one-dish meal, and a must try at home. The chilli garlic sauce adds an element of tanginess and spicy nature to the Mexican bean burritos.

Ingredients
- Tortillas
- Red beans (overnight soaked) – ½ cup
- Red chilli powder – 1 tsp
- Cumin seeds powder – 1 tsp
- Onion (sliced) – 2 tsp
- Tomato (sliced) – 2 tsp
- Capsicum chopped (red and green) – 2 tbsp
- Salt to taste
- Oil – 1-2 tbsp (for frying)

- Mexican seasoning (coriander, cumin, oregano, onion powder, garlic powder)
Step-by-Step Process to Prepare the Mexican Bean Burritos with Chilli Garlic Sauce
Pressure Cooking the Red Beans
- Take the red beans that were soaked overnight and pressure cook them for about 5 minutes. You may need around 5-6 whistles to cook them completely.
- Once the red beans are completely cooked and soft, mash them with your hands in a plastic bowl. You can even use a potato masher to mash the red beans.
(Note: Instead of red beans, you can use Mexican rice or cooked rice as well.)
Preparing the Stuffing
- Take 1 tbsp oil to a shallow pan and put the mashed red beans into it. Add some water and keep stirring using a spatula.
- Salt (1-2 tsp), cumin seed powder and red chilli powder.

- Add 2 tsp of Mexican seasoning which is a perfect blend of herbs and spices.
- Mix the red beans well and fry them on low-medium flame.
- Remove the mixture from the pan and transfer it to a bowl.
Preparing the Tortilla
- Take the tortilla and heat it on a tawa on medium heat. Tortilla already contains fat. However, you can add 1-2 tsp of oil or butter while cooking.
- Remove the tortilla when it is cooked. The tortilla will become soft.
Assembling the Vegetarian Bean Burritos
- Apply CROPINO Chilli Garlic Sauce and mayonnaise with a spoon on the tortilla.
- Place the stuffing of refried red beans on the tortilla.
- Add onions, tomato, and capsicum over the tortilla.
- Add the olives and jalapenos.
- Also, add 1-2 tbsp of grated cheese.
- First fold the left side firmly.
- Next, fold the right side over the left and ensure to wrap the tortilla firmly and tightly.
- Now, fold the top and bottom portions of the tortilla.
- Heat the folded burrito slightly on a tawa or keep it in the microwave for 30 seconds.
- Wrap the lower ¾th portion of the burrito using aluminium foil to keep it wrapped.
- Serve hot straight away or slice into two halves and serve.
