Ingredients

- 5 tablespoons olive oil
- 1 cup Soya granules (soaked in warm water for 30 minutes)
- 4 brown burger buns
- 2 medium onions (chopped)
- 2 medium onions (cut into roundels)
- 2 medium tomatoes (cut into roundels)
- 2 green chillies (chopped)
- 2 teaspoons red chili powder
- 1 tablespoon whole wheat flour (atta)
- 2 medium potatoes (boiled, peeled and mashed)
- 1/2 cup brown breadcrumbs
- 3 tablespoons refined flour (maida)
- 3 tablespoons CROPINO Tomato Ketchup
- 1 teaspoon mustard paste
- Few iceberg lettuce leaves
- Salt as per taste
- Crushed black peppercorns as needed
Step By Step Process
- Take two non-stick pans.
- In the saucepan, heat 2 tbsp of olive oil and in the non-stick frying pan, heat 1 tbsp oil.
- Add chopped onions to the saucepan. Sauté them till lightly coloured.
- Add onion roundels to the frying pan. Sauté them till lightly coloured.
- Add the soya granules to the saucepan and sauté them. Mix in the green chilies, 1/2 teaspoon red chilli powder, and coriander leaves. Add salt and whole wheat flour. Sauté for 2-3 minutes.
- When the onion slices have caramelised, place them in a bowl.
- Add the soya mixture, mashed potatoes, and brown breadcrumbs to the large bowl. Mix well.
- Take another non-stick pan and heat 1 tbsp olive oil. Cut the brown bread buns in half and grill them in the pan.
- Make 4 equal pieces of the soya mixture kept in the bowl. Shape them into tikkis to match the size of the buns.
- In a dish, combine refined flour, 1 teaspoon red chili powder, and salt.
- Keep the buns on the worktop after removing them from the pan.
- Roll the spicy flour over the soya tikkis. In the same non-stick pan, heat 2 tablespoons of olive oil, then add the tikkis and cook, flipping once, until both sides are equally brown and crisp.
- On the bottom halves of the buns, spread little tomato ketchup and mustard paste. Tear some iceberg lettuce leaves and scatter them over the bottom half. Add a few tomato roundels on top. Place the halves on a serving platter and season with salt and crushed peppercorns.
- Put a soya tikki on top of each bun, then add caramelized onions and serve immediately.
