Main ingredients
- Cooked Regular or Basmati rice – 1 cup
- Finely chopped tomatoes – ¾ cup
- Finely chopped onion – ¼ cup
- Ginger garlic chilli paste – 1/ 2 tbsp
- Chopped mixed vegetables – ¾ cup
(Peas, beans, potatoes, cauliflower, capsicum, carrots)
- Coriander leaves – 2 tbsp
- Chopped green chillies – 2-3 (optional)
- Lemon juice: 1 tsp
- Oil – 2 tbsp
- CROPINO Tomato Ketchup – 4 tbsp
- Salt for taste
Spices
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Black pepper – ¼ tsp
- Indian bay leaf (Tej Patta) – 1
- Cumin seeds – 1 tsp
- Pav bhaji masala – 2 tbsp
Step By Step Process
- Heat oil in a non-stick pan over medium to high heat.
- Add cumin seeds to the pan.
- When they start to change colour, add finely chopped onions.
- Stir and sauté the onions until they turn light golden.
- Add the ginger garlic chilli paste.
- Saute the mixture in the pan until it becomes thick.
- Add finely chopped tomatoes. Stir and saute until the tomatoes become soft and pulpy.
- Add the chopped mixed vegetables. Stir and saute for 1-2 minutes.
(The addition of veggies is optional. You can even make the pulao without veggies.)
- Now, add turmeric powder, red chilli powder, pav bhaji masala, tej patta, and black pepper. Stir and mix again.
- Add half a cup of water and cook for 2-3 minutes.
- Add the core ingredient, CROPINO tomato ketchup, and mix well.
- Add 1 cup of cooked rice and stir for 1-2 minutes.
- Add 1 tsp of lemon juice and 1 tbsp of chopped coriander.
- Turn off the gas.
- Remove the pan from the heat and serve while still warm.
Garnish with 1-2 tablespoons of chopped coriander leaves and grated coconut as well. Serve fresh, hot or warm with yoghurt, curd, or raita.
